Serving and food pairings
This gastronomic Champagne would benefit from being served in a slender flute at a temperature of 8 ° C.
It can be served with all desserts with cooked fruit and cream. As an example, the charlotte with pears or peaches, the apricot cake, the caramel cream, and even some desserts with milk chocolate. Nevertheless, avoid dark chocolate, ice cream and sorbet.
Visual analysis
The color is appetizing, deep and golden as desired. It is enlivened by a rich and creamy effervescence which nourishes a beautiful bead of bubbles on the surface.
The presentation of this Cuvée prepares the palate.
Olfactory analysis
The “first nose” is very open on custard, cooked peach, honey. This is a fruity nose, frank and greedy who has both summer and evolution notes. After aerating, we perceive cooked fruit, dried fruit, caramel, nougat, etc.
The air tightness is good, the wine does not oxidize, a sign that has the resource.
Taste analysis
The initial impact on the palate is thick and sweet, with a very melted effervescence and receding acidity. Then the wine shows all its charm. Fleshy, smooth and balanced, it presents the perfect marriage of vinosity and liquor. The tasting is delicious and the effervescence and acidity ensure the tempo in counter point. The whole produces a beautiful volume, a very thick and comfortable velvet texture.
The final
The aromatic finish is very long (more than 10 seconds). It asserts itself with generosity and "sweetness", and shows, on nougat aromas, a slight calcareous minerality.
