It pairs beautifully with oysters served with green apple and lemon, sea bream ceviche, sesame-crusted tuna tataki or seared octopus with lime and ginger.
For a vegetarian pairing, its freshness and minerality complement young roasted carrots with citrus and cumin, or roasted fennel with orange, lemon and toasted almonds.
Fine, steady effervescence animates the glass with elegance, forming a delicate and persistent ring of mousse.
From the very first glance, this Champagne conveys freshness, precision and vitality.
More subtle notes of fresh thyme and damp chalk then emerge, offering a distinctive expression of the Champagne’s limestone origins.
A nuanced aromatic profile, poised between richness and the mineral character of its terroir.
The texture is fine and light, yet taut and delicately crisp, with a tactile quality reminiscent of taffeta.
A distinctive sensation that beautifully underscores the purity and mineral identity of this Blanc de Blancs.
Chalky nuances and salinity become more pronounced towards the close, while a fresh hint of grapefruit extends its persistence, leaving an impression of remarkable tension and purity.

Its energy and pronounced salinity make it particularly enticing as an aperitif and a natural partner at the table for oysters, sea bream ceviche, tuna tataki or refined vegetable dishes combining citrus, spices and aromatic herbs.
Certified Organic Winemaker
Born in the cradle of a winegrowing family in Vertus, my childhood was naturally intertwined with the vines. From an early age, I was introduced to the rituals of the vineyard, seeing summer work as an essential gateway to my school vacations.
However, it was at the age of 15 that my true passion for the art of wine was awakened. My first experiences of winemaking and tasting ignited in me a love for oenology and the subtle art of tasting.
What really captured my imagination was the aromatic richness of the wines, sculpted by their terroir of origin and the history of each vineyard.
I discovered that the heart of a great Champagne de terroir beats thanks to the exceptional quality of its grapes.
My philosophy is rooted in a desire to produce grapes and wines that faithfully reflect their terroir. I am committed to cultivating my vines in harmony with the surrounding ecosystem, thus preserving the essence of the life that abounds there.
For me, wine is more than a drink; it's a story about the land, a story of passion, commitment and a deep respect for the precious gifts of nature.
This is the essence of my quest as a winemaker in Vertus: to create wines that, with every sip, reveal a story, a place, a passion.
