Best served in a large flute, at a temperature of 10-12 degrees. This 1998 will be enough by itself for an aperitif opening minds ... and stomachs.

Visual analysis
The color, very bright, is yellow and adorned with green reflections announcing a still young wine. The bubbles, fine and sparkling, form a pretty bead and crackle on the surface. The overall presentation is fresh and festive at the same time.
Olfactory analysis
The first nose is discreet, young and refined. It opens on notes of grapefruit and white flowers on a mineral background. After aerating, the body becomes richer and more mature. Fresh butter, honey and ginger bring complexity. Still later, the wine demonstrates its finesse with the aromas of candied lemons, lemongrass, honeysuckle, jasmine. This 1998 vintage is a marvel of finesse, elegance and freshness. After twenty minutes in the flute, the minerality takes over and the expression becomes racy.
Taste analysis
The initial impact on the palate is lively, despite a rather melted effervescence. It leads to a great acidity, of remarkable quality. The mouth is tense, as almost always with this winemaker, and it is the acidity that gives the tempo. The dosage is imperceptible and the vinosity provides just the right amount of body to enhance the acidity and firm texture of the wine. This is a magnificent example of Champagne balance.
The final
The finish is long, tangy and refreshing. It leaves a slightly chalky and bitter feeling on lobster flavors. The last sensation is saline and marks the great origin of this wine.
