Serving and food pairings
This Cuvée deserves to be offered at 10 or 12 degrees of temperature in a very large goblet flute in order to benefit from the full range of its expression.
It will be appreciated at the aperitif of course, but also paired to some fatty oysters (open sea), large crustaceans, lobsters, a lemon shellfish salad, or more simply a fish with a drop of olive oil or white butter.
Visual analysis
Gold and green colours, no sign of evolution, the appearance of this Millésime is shining with a myriad of very fine bubbles. The visual of this 1996 vintage sparkles with a myriad of very fine bubbles. The foam, pure white, occupies the entire surface. Magnificent presentation for this wine full of itself.
Olfactory analysis
The first nose, very elegant, expresses itself with nobility: cookies, butter, ginger, saffron. A small aeration of a few minutes confirms the excellent quality of this wine. The very ripe pear and the purity of the minerality, reminiscent of large crustaceans, sign a wine of great origin. The acacia honey brioche with butter, thyme and lemongrass prolong the pleasure.
The air tightness after twenty minutes in the flute is excellent and confirms the potential of this 1996 that is held to a very high level of complexity and finesse.
Taste analysis
The initial impact on the palate is open and accompanied by a molten effervescence slightly recessed. Then the body of the wine occurs. Faced with superb acidity, the vinosity holds its rank perfectly.
Lively and tense, certainly, this wine presents itself as broad and full. The concentration is undeniable and the dosage in liquor is imperceptible. The texture of the wine thus recalls velvet.
The final
The finish is perfectly clean and very sapid. With excellent persistence, around 12 seconds, it is tasty and aromatic. Butter, undergrowth are noticeable and accompany the strong chalky impression. This finish suggests a very good aging in the cellar.
