More and more Champagne producers are rethinking the way they farm.
Some choose organic agriculture, the most rigourous approach, eliminating synthetic chemicals to preserve the natural balance of the soil and encourage biodiversity. Healthier soils allow roots to grow deeper, resulting in wines that express their terroir with greater precision.
Others adopt certifications such as HVE (High Environmental Value), which evaluates the overall environmental impact of an estate — from water management to biodiversity and the reduction of chemical inputs.
And then there are growers who embrace a broader philosophy of sustainable farming, constantly adapting their practices to respect and preserve the ecosystem.
All of these choices require more work, more care, and often lower yields. But they reflect a deep respect for the land and for the future of Champagne.
