Serving and food pairings

Serve this Champagne in a tulip flute at 10 ° C temperature. It will accompany your appetizers and your salty dinatoires entries. Rather oriented towards the sea, it will go well with grilled fish and shellfish.

Visual analysis 

The visual is a beautiful gold color. The wine seems to slowly reach maturity. Animated by a quiet effervescence, the bubbles gradually widen.
The presentation is rich and appetizing!

Olfactory analysis 

The first nose is released without moderation: we are at the end of Summer! Bread, honey, quince, currants with toasted bread reveal a strong character and the long aging in the cellars.
Aeration allows to the cuvé to gain in complexity: the lactic and mineral notes have given themselves a rendezvous, we also perceive a little mushroom and aniseeds aroma. After ten minutes in the flute, you can perceive some notes of the cellar yeast, as well as the scents of toast and butter too.
It is a very open nose, with real opulence coupled with beautiful complexity.

Taste analysis 

The initial impression on the palate is tonic and sweet at the same time. The acid-sugar balance is rich.
Nervous and appetizing, the palate shows a lot of temperament and a pleasant "creaminess". The effervescence is kept aside and brings a festive note to the whole. The wine expresses itself in length. It is a slender with a slightly full-bodied character.
The palate is between youth and maturity and it confirms the aromatic expression.

The final 

The finish is very long, about 10 seconds of persistence, fresh and mineral. The tasting ends up with a nice acidity and is wrapped in notes of honey, bread and apricot.
It clearly invites you to try another sip.
