Serving and food pairings

This gastronomic Champagne should be served in a wide flûte at a temperature of 10-12°C in order to fully enjoy its aromas. Interesting for a sumptuous aperitif, it can be served with risotto, mature cheeses and tasty meats with a soft texture.
You can try Orloff veal, stuffed pork, chicken in Satay sauce, duck laqué or in orange sauce, ossobuco... and Epoisse or Langres cheeses.

Visual analysis 

The blond colour, slightly tinged with pink, is animated by a nourishing, fine and lively effervescence.
A beautiful chain of bubbles crowns the surface.
The presentation of this 2013 Cuvée Spécial Club is rich, frank and elegant.

Olfactory analysis 

The first nose is open with aromas of stone-fruit, raspberry, rose, praline and biscuit. This is an intense and gourmet nose, well in place and very appetizing.
After aeration one perceives notes of candied fruits, fruit liqueur, underwood, with some wild notes (cranberries, leather). After many minutes, the "airiness" is good and indicates the good health of this Cuvée.

Taste analysis 

The first impact on the palate is broad, with a very soft effervescence, then the wine settles down and shows a nice consistency. The sugar content accompanies this gently and subtly brings a delightful character to the tasting.
The vinosity sets the tone while the acidity, well stretched, ensures the tempo in counterpoint.
The whole produces a nice volume, a texture that suggests a thick wool, on aromas of honey, fig, pears and cooked apples.

The final 

The finish is very long (over 10 seconds) and aromatic (cinnamon, nougat, shells).
It imposes itself with power and finishes with a marked saline note.
