Serving and food pairings
An ample flûte and a temperature between 10 and 12 ° C allow this Millésime 2010 to express itself fully, seducing even the most demanding lovers. It will be wonderful with scallops in mandarin sauce, sole meunière, turbot in Champagne, breaded langoustine tails or a soup of Jerusalem artichokes and mushrooms.

Visual analysis
The clear color is adorned with green reflections. The sparkle of the extremely fine and slow bubbles suggests serenity.It emanates a feeling of delicacy and freshness.
Olfactory analysis
The first nose is elegant and complex.the floral (lily of the valley, jasmine), lactic (butter, cream) and iodized, immediately seduces us. We also perceive notes of cookie and almond milk.
Remaining always very delicate, the expression gradually takes on a balsamic character and tends toward hazelnut and juniper.
Taste analysis
The first impact on the palate is dynamic, lively and crisp.It presents us with a slender and airy palate, typical of its vintage. The beautiful acid structure dominates and gives the rhythm, while the effervescence is perfectly integrated to the body of the wine.
This slender, almost arachne structure is accompanied by honey aromas (showing the beginning of evolution) and a chalky minerality. The overall structure suggests the delicate and elegant touch of silk.
