Serving and food pairings
To serve in a slender flute, at 8 ° C temperature in order to preserve the beautiful aromatic freshness expression. Then, as it warms up, the salinity taste will appear.It will pair mainly with seafood with an elegant structures. We obviously think of scallops and roasted scampi, sole and sea bream with lemon, but noodles with baby vegetables or lemon and parmesan will be welcome too. In spring, savory pies with vegetables, with asparagus for example.

Visual analysis
The yellow-green color is intense and very bright. The effervescence is lively, fine, delicate and creates a halo of very white foam on the surface.The visual presentation is sparkling and suggests the beginning of maturity.
Olfactory analysis
The first nose immediately offers a great freshness and elegance. We perceive beautiful notes of lemon, nuanced aromas of thyme on a bed of yeast, to witness the long aging in the cellar (autolysis).After aeration, we still can feel the freshness, tinged with a vegetable character: vervain, fern, honeysuckle. Later still, softer tertiary notes appear, such as mushrooms and waffle paste.
It is a complex nose that offers evolutionary notes while maintaining the freshness of its youth.
Taste analysis
The acidity is well present at the first impact.The palate is lively, tense, vertical and a good consistency. The wine looks full and the effervescence is creamy. The whole creates a structure similar to silk.
The pleasant acidity is enhanced by aromas of almond as well as toasty notes.
