To fully appreciate the complexity of this wine, take care to serve it between 10- and 12-degrees temperature and in a well-rounded flute or wine glass.
This structured wine will delight the company of dense cheeses and noble fleshy and tight meats. Think the prime rib or the rack of lamb in the oven, the partridge or the roasted youngsters, the fillet of deer, the old Gouda, the Mimolette, the Salers.
The visual comes in a fairly light blonde hue. The lively effervescence carries sparkling bubbles which feed a pretty halo on the surface.
The presentation is very dynamic and fresh.
The olfactory expression is appetizing and of great intensity. At first, it is dominated by baguette, yellow flowers and apricot, then quickly, more ripe notes of vanilla, dried flowers, cereals, on a smoky and creamy background which bring depth as well as 'an earthy and autumnal character.
The nose of this Cuvée Club is complex and above all very fine.
After 10 minutes, the plum and “l’eau-de-vie” appear and indicate the path that will take the wine in the future.
The initial impact on the palate is sharp, the effervescence associating with the acidity. Then the wine takes on substance and warmth. A nice acidity without “biting” brings a certain dynamic to the tasting. Vinosity and concentration assert with warming. These various sensations produce a dense, firm and warm texture, and the whole is expressed with great purity.
The finish is long (about eight seconds) and embellished with aromas of hazelnut and plum. It gives a glimpse of a beautiful limestone minerality and ends with a slight acid and saline hint.
