Visual analysis
The gold-green color is slightly marked; the wine has reached maturity.The effervescence, agitated at the time of serving, gradually calms down, as the bubbles are refined and enrich a nice bead of foam.
The visual presentation is graceful!
Olfactory analysis
The first nose indulges without restraint: bread, wilted flowers, mirabelle plum, candied grapefruit, accompanied by a slightly roasted character, reveal a racy and adult character, and show the long aging in the cellar.Aeration allows to the wine expression to gain in richness and evolution: cashews, honey and caramel are enhanced by a feeling of saline minerality.
It is a very open nose, extremely appetizing, indulging without restraint in a beautiful complexity.
Taste analysis
The initial impression on the palate is invigorating and tender at the same time. Indeed, the wine - sparkling balance is perfect.The excellent effervescence accompanies the divine acidity of the wine and enhances its slightly fleshy matter. The wine expresses itself in length.
It stays straight, taut, fresh, and ends up imitating the tactile character of the silk.
The final
The finish is very long (more than 10 seconds of persistence) and great character. It gives us a very racy chalky sensation, enhanced by salty notes with the most beautiful effect.
