It is a "textbook wine", and it is very interesting to follow the evolution in the flute, quietly, before or after dinner. Initially perceived as a woody Chardonnay, it then shows us the long work of aging in the cellar (the autolysis of the yeasts which greatly contributes to the creaminess of the structure), before telling us about its origins, its year of birth.

Serving and food pairings

This Champagne is ideal for an aperitif "in front of the fireplace". A moment in which he will be the protagonist of the conversation. It will be interesting to serve it in a slender flute at 8 ° C and then follow it up to 12 ° C and see its character evolve. Its structure and aromas will be perfect with a scallop carpaccio in truffle oil, sautéed mushrooms or a tajine of root vegetables.

Visual analysis 

The color of this Cuvée is bright. Golden yellow, with still some light green reflections, it has a slow and regular effervescence which feeds an embroidery of foam on the surface. The presentation is particularly delicate.

Olfactory analysis 

The first nose, very classic, is appetizing. We clearly perceive notes of lemon, pear and cereals on a very refined base of vanilla. After a few moments, the expression becomes more distinctive. The acacia and hazelnut aroma appear, but also a iodised sensation. After ten minutes, the wine evolves towards honey, mint, verbena and roots. The general character is evolving. From classicism we are gradually moving to the expression of the terroir.

Taste analysis 

The initial impact on the palate is immediately creamy and then effervescent and greedy. Rich and fresh, it is wonderfully tactile, suggesting umami. It acts as a reward. Effervescence and dosage stand back. Gradually the ardor of the year (2011 is a hot year) and the minerality of the terroir are asserted. As for the olfactory analysis, we pass from classicism to the expression of terroir.

The final 

The finish is very long (10 seconds of persistence) and lets the year express. It expresses itself on the firmness and some mentholated notes. It comes off very straight and chalky.
