Serve this Cuvée at 8 ° C in a slender flute to avoid destabilizing this balance.
For the food-pairing, we should focus on rather firm texture, with for example breaded prawns, grilled fish, crunchy vegetables. We can finish the meal with a semi-dry goat cheese with red pepper and a drizzle of olive oil.
Visual analysis
This Cuvée appears very fresh, light yellow in color with green and golden reflections. The small and slow bubbles bring grace and serenity to the visual presentation and form a beautiful halo on the surface.
Olfactory analysis
The first nose immediately shows his style. We can guess both the elegance and refinement of the Cuvée. On a background of citrus, wheat and fairly classic bread, we find dried flowers and balsamic notes. After a few seconds of aeration, the expression evolves towards ginger, rapeseed honey, caramel and butter. Later, it is the minerality to manifest. It is a complex nose with a beautiful purity. The air tightness is perfect after twenty minutes in the flute.
Taste analysis
The initial impact on the palate is dynamic, the combining acidity and effervescence, give the tempo. Very quickly this sensation is rounded off by the dosage. The latter comes to underline the beautiful frankness of the acidity throughout the tasting. The body of the wine is fluid and sparkling, both light and cheerful. The whole offers a texture that is both firm and delicious, enhanced by the aromas of cookies, crème fraiche, citrus and white flowers.
The final
The finish is long (8 to 10 seconds of persistence), first creamy then, when the effervescence has faded, slightly biting and chalky.
