Pure or Baroque?

Champagne is a wine, the ideal companion for a meal, festive or convivial.

WHAT IS THE MEANING OF PURITY OR BAROQUE IN THE WORLD OF CHAMPAGNE?

The notion of purity refers to a strong and intimate coherence in wine.

When a Champagne is pure, it follows a guideline that allows it to develop a sense of unity.

In tasting, the visual aspect announces the olfactory sensation, which in turn prepares us for the gustatory experience.

In this case, Champagne expresses a logic and continuity between its different constituent elements.

The concept of purity can be likened to Art, where this notion derives from a regularity, an impression of perfect balance and beauty of form.

The purity of the lines in a drawing, the purity of the contours, of the stroke...

In art, purity refers to Classical Art.

Other Champagnes do not respect the line, or more precisely, they multiply the lines, twist them, cut them.

These works reveal themselves in the juxtaposition or accumulation of effects, multiplying sensations, colours and movement.

Again as a metaphor for the art world, the heterogeneity of style can be compared to the Baroque.

But beware, purity is not synonymous with quality, nor vice versa.

WHAT DETERMINES THE DEGREE OF PURITY OF A CUVÉE?

In Champagne, purity is favoured by limestone soils, by the Chardonnay, cool vintages and vinification in steel vats.

Conversely, a baroque personality is favoured by clay soils, atypical vintages, barrel vinification (aromas, smoothness) or high dosage.

For successful Champagne/food pairings, it is important to match the personality of the Champagne as closely as possible to that of the dishes to be tasted.

In the kitchen, with a pure Champagne, it will be necessary to limit the number of ingredients, flavours and types of cooking: simplicity will be synonymous with success. On the other hand, baroque Champagnes will be at ease with "assemblage" dishes: complexity will be welcome.
